Chocolate Maple Chicken Wings (Tanda's Recipe)
- 6 lbs chicken wings
- 1 tablespoon sea salt
- Juice of 1 lime
- 1 tablespoon oregano
- 1 tablespoon crushed cumin seeds
- 1 teaspoon cayenne pepper
- 1 tablespoon paprika
- 1 tablespoon cocoa powder
- 1/2 cup maple syrup
Place chicken wings in a large bowl. Toss the wings in the ingredients to coat thoroughly. Marinate one hour. Bake at 350 degrees (drizzling sauce left in bowl over the chicken in the baking dish) or BBQ over a moderate fire (using the sauce to baste). Enhance the BBQ flavor by using mesquite wood chunks on a charcoal fire.
