Ingredients

    eggs

  • 2/3

    cup pumpkin (not pumpkin mix)

  • 1

    c sugar

  • 1

    tsp lemon juice

  • Beat with mixer

  • ( in separate bowl)

  • 3/4

    c flour

  • 2

    tsp cinnamon

  • 1/2

    tsp nutmeg

  • 1

    tsp ginger

  • 1

    tsp salt

  • 1

    tsp baking powder

Directions

Fold dry ingredients in above mixture. Spread into well greased and floured 15x10x1 inch pan. (Cookie sheet). Bake 375 for 15 minutes. Turn cake out on towel sprinkled w/ powdered sugar. Start at one end, roll cake and towel together, refrigerate. After cake is cool, unroll for filling. Filling 1 c powdered sugar 4 tbsp margarine 1 (8oz) cream cheese 1/2 tsp vanilla Beat w/mixer, spread over cake, roll cake and chill 1 large can pumpkin (29oz) makes 5 rolls
