Ingredients

  • 16 oz. elbow macaroni
  • 3/4 cup mayonnaise
  • 3 Tbsp. rice vinegar
  • 1 tsp. salt
  • 1/4 cup sour cream
  • 1 1/2 tsp. ground black pepper
  • 1 cup tomato, seeded and diced
  • 1 cup baby spinach, chopped
  • 8 strips bacon

Preparation

Step 1

Cook macaroni according to package instructions.
Drain macaroni.
Add mayonnaise, rice vinegar, salt, sour cream, ground black pepper, tomatoes, and baby spinach.
Cook bacon until crispy and crumble into small pieces.
Add bacon pieces and toss all ingredients with macaroni until combined.
Cover and refrigerate until ready to serve.
