Taylor Ham, Egg, Cheese, and Potato on a Roll
My most favorite BRINNER.. breakfast for dinner.. DELICIOUS sandwich!!!!!
Ingredients
- 3 cans sliced white potatoes
- 3/4 cup chopped red pepper
- 3/4 cup chopped green pepper
- 3/4 cup chopped onion
- salt
- pepper
- paprika
- olive oil
- butter
- eggs
- taylor pork roll
- Kraft american cheese
- ketchup
- GOOD bakery roll

Preparation
Step 1
Heat up some butter and olive oil in frying pan. Cook your peppers, both red and green, and your onions a bit till softened. Throw in your sliced potatoes, drained. Cook over low heat for 40 minutes. Keep warm.
Cut 4 slits into your Taylor ham at opposite ends, about 1/2 inch deep. Fry them in butter till brownish, flip once. Use 4 slices for 2 sandwiches. Top one slice of Taylor Ham with American yellow cheese, then place another Taylor Ham slice over it. Cook for 30 sec or 1 minute till cheese meltes a little.
Meanwhile, fry 2 eggs over easy, do not over cook, we want a runny yolk.
Assemble: Open your roll, place the Taylor ham sandwiched cheese on roll, followed by an egg or two, folowed by a heaping mound of potatoes. Add some ketchup. Close roll. Cut in Half. Yolk should be dripping.
Serve with extra potatoes on side... so so so so so good.
