Berry Blondies

Ingredients
- 6 oz fine quality white chocolate, chopped
- 5 Tbsp unsalted butter, cut into pieces
- 2 eggs
- 2/3 cup sugar
- 1 tsp vanilla extract
- 1 1/3 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup fresh raspberries
- 1 cup fresh blueberries

Preparation
Step 1
1. Position rack in middle of oven. Heat oven to 325 degrees. Line 9x9x2" square baking pan with foil; grease.
2. In metal bowl, set over saucepan of barely simmering water, melt white chocolate and butter, stirring until smooth. Let cool to room temp.
3. In large bowl, beat eggs, sugar, vanilla on med. speed until thickened and pale, 3 min. On low, gradually beat in chocolate mixture. Into a bowl, sift flour, baking powder and salt. Beat into chocolate mixture until combined. Spread evenly in prepared pan. Sprinkle with berries.
4. Bake in middle of 325 degree oven until top is very lightly browned but center is still soft when pressed, 45-50 min. Let cool completely in pan on rack. (They are easiest to cut chilled, but serve at room temp for best flavor)
