Fried Rice with Bacon & Fresh Coriander

Ingredients
- 1 tsp (5 mL) olive oil
- 2 eggs, beaten
- 1/4 lb (125 g) bacon, chopped
- 2 cloves garlic, chopped
- 1 red bell pepper, chopped
- 1 small onion, chopped
- 1 cup (250 mL) mushrooms, sliced
- 1 1/2 cups (375 mL) cooked white rice
- 1/2 cup (125 mL) soy sauce
- 1/2 tsp (2 mL) chopped fresh ginger
- 1/2 tsp (2 mL) dried basil
- 1/3 cup (60 mL) chopped fresh coriander (or parsley)

Step 1
Heat the oil in a large saute pan or wok and scramble the eggs. Remove the scrambled eggs and set aside. Cook the bacon in the same pan for 3-5 minutes.
Add the garlic, red bell pepper, onion, mushrooms, and rice. Saute, mixing, for 4-6 minutes.
Add all of the remaining ingredients, except the coriander and scrambled eggs. Continue to saute and mix tor another 3-5 minutes. Add the chopped coriander and scrambled egg and serve.
