Ingredients

  • 12 medium sized potatoes (4 lb), peeled and halved
  • Water
  • 1/2 c. margarine
  • 8 oz. fat free cream cheese, room temp, cut into pieces
  • 1 c. fat free sour cream
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. paprika (optional)

Preparation

Step 1

1. Put potatoes and enough water to cover them in a large pot over high heat. Cover and bring to a boil.
2. Reduce heat to medium. Partially cover and cook at low boil for 20 minutes until tender; drain.
3. Melt butter in same pot over medium heat.
4. Add cream cheese; remove from heat.
5. Beat until cream cheese is melted with mixture and smooth.
6. Add sour cream, salt and pepper; beat until smooth.
