Chicken Salad with Wild Rice
- Prepare Ahead: 1/2 cup wild rice; 1 1/2 cups water; salt; 2 cups diced poached chicken (1 cup = 1 breast); 1/2 cup thinly sliced green onion; 1/2 cup diced celery; 1/2 cup toasted blanched almonds, chopped.
Rinse rice under running water. Bring 1 1/2 cups salted water to rapid boil in medium pan over high heat. Stir in rice & return water to rapid boil. Stir rice with fork & reduce heat so water simmer gently. Cover & cook until grains puff open & white interior of rice appears, 25-35 minutes. Rinse rice under cold water, drain well. Change to large bowl. Add chicken, green onion, diced celery & chopped almonds.
