Ingredients

  • CRUST:
  • 2 c flour
  • 1/2 c p sugar
  • 1 c butter, softened
  • 1 tsp lemon peel
  • FILLING:
  • 4 eggs
  • 2 c sugar
  • 1/4 c flour
  • 1 tsp baking powder
  • 1/4 c fresh lemon juice
  • 1 tsp grated lemon peel
  • GLAZE:
  • 1 c p sugar
  • 2-3 T lemon juice

Preparation

Step 1

You will need two lemons for this recipe
heat oven to 350
In large bowl of mixer. beat flour, sugar, butter and peel at low speed until crumbly using bread hook
Press into 9x13 ungreased pan and bake 20-30 minutes until light brown
whisk eggs and add other above ingredients and mix well.
beat in 1/4 c lemon juice and peel
Pour over crust
Return to oven and bake 25-30 minutes more until lite brown
Cool about 1 hour or more.
Mix p sugar and lemon juice for spreading consistency until smooth.
Spread over cooled bars
Allow bars to come to room temp from frig before serving.
