Ingredients

  • 1 3/4 c sugar
  • 1 c butter, softened
  • 2 large eggs
  • 2/3 c oil
  • 3 c flour
  • 4 1/2 oz almonds finely ground
  • 1 t baking soda
  • 3/4 t salt
  • 2 t pure lemon extract

Preparation

Step 1

In large bowl, cream together the sugar and butter. Add the eggs and oil. Beat until well blended.
In medium bowl combine flour, almonds, baking soda and salt. Stir to mix. Add flour/almond mixture and the lemon extract to the cream mixture. Beat well.
Drop dough from teaspoon onto ungreased cookie sheet spacing 2" apart.
Using bottom of a glass that has been dipped into sugar, flatten the dough.
Bake at 375 degrees for 10-12 minutes.
Remove from cookie sheet immediately to cooling rack.
