Make Ahead Egg Sandwiches

Prepare the makings of a gourmet breakfast sandwich once a week and you'll be eating breakfast in 15 minutes or less without the mess. Easy to make the eggs ahead of time and assemble as you are ready to eat.

  • Salt and pepper, to taste
  • 8 tomato slices
  • 8 Cheese, slices or shredded
  • 8 slices Canadian bacon, or ham

Step 1

Preheat the oven to 350°F. Spray a muffin pan with non-stick cooking spray.

Pop a few spinach leaves into each muffin cup. If you'd prefer, feel free to swap them in. Anything goes here!

Crack an egg into each muffin cup. Season with salt, pepper, and any other favorite seasoning.

Bake for 15 minutes. Cool.

Once your breakfast sandwich fillings have cooled, store them in a tightly sealed container in the refrigerator for the week ahead.

Each morning, grab your favorite bread (I suggest an English Muffin), place the egg filling in the middle, and microwave for 30-45 seconds.

Tips:
Add a little cheese to the mix and you'll be eating like a breakfast pro in no time.

Place a slice of Canadian bacon or ham in the muffin cup, if desired.

This is also great for a brunch. Make the eggs ahead of time, and make the breakfast sandwiches just before everyone arrives! Or, let guest make their own!
