Flank Steak Tacos with Avocado-Lime Salsa

Ingredients

  • 1 T chili powder
  • 2 tsp grated lime rind
  • 1/2 tsp salt
  • 1/2 tsp chipotle chili powder
  • 1/4 tsp ground black pepper
  • 1 (1 lb) flank steak, trimmed
  • 1 c. diced peeled avocado
  • 3/4 c. finely chopped tomato
  • 1/3 c. finely chopped sweet onion
  • 1/2 tsp lime rind
  • 2 T fresh lime juice
  • 1/4 tsp salt
  • 1/2 tsp hot sauce
  • 8 corn tortillas
  • 2 c. thinly sliced green cabbage

Preparation

Step 1

1.) Combine first 5 ingredients in a small bowl. Score a diamond pattern on both sides of steak. rub chili powder mixture evenly over steak. Cover and chill 1 hour.

2.) Prepare grill to medium-high heat. Place steak on grill rack coated with cooking spray. Grill 5-8 min per side. Cut diagonally across grain into thin slices.

3.) To prepare salsa, combine avocado and next 7 ingredients.

4.) Warm tortillas and spoon steak mixture and top with salsa and cabbage.
