Ingredients

  • 3/4 c finely diced tomatoes (de-seeded)
  • 2 t finely diced onions
  • 1 t finely chopped basil
  • 1 t Italian seasoning
  • 1 package Athens mini phyllo shells
  • 1/2 c shredded mozzarella
  • 1/4 c mayo

Preparation

Step 1

Preheat oven to 350 degrees

In a bowl, mix tomatoes, onions, basil and seasonings. In another small bowl mix 3/4 of the mozzarella and mayo.

Place the phyllo shells on a cookie sheet, fill each with the tomato mixture. Top with the mozzarella mixture, sprinkle remaining cheese on top. Bake each 10-12 minutes until bubbly, serve hot.
