Mint Bulgur Wheat and Peach Salad

Ingredients
- 2 c. boiling water
- 1 c. uncooked bulgur wheat
- 3 T lemon juice
- 2 T lime juice
- 2 T extra virgin olive oil
- 1 T honey
- 1/2 tsp salt
- 2 c. diced, peeled peach (about 2 medium)
- 2 c. diced, peeled jicama
- 1/4 c. mint

Preparation
Step 1
1.) Combine boiling water and bulgur in a large bowl; let stand 1 hour or until water is absorbed.
2.) Combine juices and next 3 ingredients, stir well with whisk.
3.) Add peach, jicama, and mint to bulgur; toss to combine.
4.) Drizzle dressing mixture over bulgur mixture. Toss to coat. Chill 1 hour.
