Ingredients

  • Measurements to make a 1 1/2 pound loaf:
  • 2 cups bread flour
  • 1/3 cup potato flour (potato starch) or 1/3 cup of bread flour
  • 1/3 cup mashed potatoes, room temperature
  • 7/8 cup (1 cup minus 2 Tbsp. water)
  • 1 1/2 Tbsp. honey
  • 1 teas. salt
  • 2 Tbsp. unsalted butter, room temperature and cut into bits
  • 1/3 cup instant nonfat dry milk solids
  • 3/4 - 1 teas. active dry yeast
  • 1 . Procss the ingredients according to the manufacturer's instructions for a basic bread setting.
  • 2 . Remove the bread from the bread pan to a rack to cool.
  • Wrap in aluminum foil to store.

Here's one that I make from the book "Bread in Half the Time" (using a bread machine).
Country White Potato Bread
"High rising with a crisp crust, this loaf gets its wonderful flavor from mashed potatoes and potato starch."

Makes 1 pound loaf, basic bread setting

2 cups bread flour
1/3 cup potato flour (potato starch) or 1/3 cup of bread flour
1/3 cup mashed potatoes, room temperature
7/8 cup (1 cup minus 2 Tbsp. water)
1 1/2 Tbsp. honey
1 teas. salt
2 Tbsp. unsalted butter, room temperature and cut into bits
1/3 cup instant nonfat dry milk solids
3/4 - 1 teas. active dry yeast
