Ingredients

  • Glaze:
  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 4 eggs, separated
  • 3 1/2 tblsp grated lemon peel
  • 3 cups cake flour, sifted
  • 2 1/2 tsp baking powder
  • 1 tsp salt
  • 1 1/2 cups finely chopped walnuts
  • 1 cup milk
  • 1 tblsp lemon juice
  • 1/4 cup EACH lemon juice, orange juice, pineapple juice
  • 2 tblsp butter
  • 2 1/2 cups confectioners’ sugar

Step 1

Cream butter and sugar, beating until fluffy. Add egg yolks, one at a time, beating well after each addition. Stir in lemon peel. Combine flour, baking powder, salt, and walnuts. Stir flour mixture into butter mixture. Stir in milk and lemon juice. Beat egg whites until stiff; fold one-half of whipped egg whites at a time into butter mixture. Spoon mixture into two greased and floured 9 X 5 inch pans. Bake in a preheated 350 oven 40-45 minutes or until a toothpick inserted in center comes out clean. Remove bread from pans and cool on wire racks.

Heat juices and butter. Stir in confectioners’ sugar; blend until smooth. Spoon glaze over bread.
