Ingredients

  • 2 bunches asparagus, trimmed and cut into bite-sized pieces (1 lb.)
  • 2 Tbsp minced garlic
  • 2 Tbsp olive oil
  • 1/4 cup sliced almonds, toasted
  • Salt and black pepper to taste

Preparation

Step 1

Blanch asparagus in a large pot of boiling salted water until al dente, about 2 minutes. Drain asparagus and immediately plunge into a bowl of ice water to stop the cooking, then drain again.

Saute garlic in oil in a large saute pan over medium-high heat until fragrant, 1 minute. Add asparagus and cook to heat through, 3 minutes. Stir in almonds and season with salt and pepper.
