Moroccan Chicken Burgers with Feta and Carrot Slaw

Ingredients
- 1 lb ground chicken
- 1/2 medium yellow onion, grated
- 3 tbsp chopped, fresh mint
- 2 tbsp harissa
- 1 1/2 tsp ground cumin
- 1 1/2 tsp finely grated fresh ginger
- Kosher salt
- 3 medium carrots, grated
- 1 tbsp fresh lemon juice
- 2 tsp granulated sugar
- 1 tsp cumin seed
- 4 mini whole wheat pitas, split open
- 1 1/2 oz. crumbled feta
- Vegetable oil for grilling

Step 1
Prepare a medium heat grill.
With your hands, mix the chicken, onion, 1 tbsp mint, harissa, ground cumin, ginger and 3/4 tsp salt in a bowl. With wet hands, form into four patties.
Toss the remaining mint with the carrots, lemon juice, sugar, cumin, and salt to taste. Season with more lemon juice and salt as needed.
Oil the grill and grill the burgers, and cook through, about 10 mins. Serve in pitas along with feta and slaw.
