Ingredients
- 2 10 oz. packages frozen thawed raspberries, drained, juices reserved
- 2 cups granulated sugar
- fresh lemon juice to taste
- 1 1/4 cups unsalted butter
- 3/4 lb. bittersweet chocolate
- 6 eggs separated
- 1/2 cup milk
- 1 cup cake flour sifted
- 2 tsp. baking powder
- 1/4 tsp. salt
- fresh raspberries (optional)

Preparation
Step 1
puree raspberries and sugar until smooth
strain with juices through fine strainer
place raspberries, 1cup sugar, and lemon juice in heavy saucepan
cook over low until sugar dissolves
set aside
in a double boiler melt butter and chocolate
cool
in a large bowl whisk yolks and sugar
add milk and stir into chocolate mixture
in a separate bowl sift flour, baking powder, and salt
in another bowl whip egg whites with electric mixer until soft peaks form
pour liquid ingredients into dry ingredients and mix gently with spatula
fold in egg whites
cook in waffle iron approx 3-5 min.
serve with puree and whipped cream and fresh berries
