Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 2 cups finely shredded carrots
  • 1 cup cooking oil
  • 4 eggs

Preparation

Step 1

In a bowl combine flour, sugar, baking powder, baking soda and cinnamon.

Add carrots, oil, and eggs and Beat with electric mixer till combined.

Pour into greased and floured baking pans, size and baking times as follows:
two 8x1 1/2 inch round baking pans for 35-40 minutes
one 13x9x2 inch for 30-35 minutes
one 15x10x1 for 25-30 minutes
cupcakes for 18-23 minutes

Bake in 350 degree oven. They are done when toothpick inserted in center of pan comes out clean.

Cool on wire rack for 10 minutes before removing from pans. Cool thoroughly before frosting (suggestion: Cream Cheese Frosting)
