Ingredients

  • 1/2 tbsp. vegetable oil
  • 1/2 large onion, chopped
  • 1/4 tsp. ground ginger
  • 1/2 tbsp. curry powder
  • 1 small dried chili (I use a dash of chili powder.)
  • 4 sweet potatoes, peeled and cut into chunks
  • 1/2 tbsp. sugar (I use Splenda.)
  • Dash of salt and pepper
  • 3/4 c. water
  • 1/2 c. skim milk

Preparation

Step 1

1. Heat the oil in a large heavy saucepan over medium heat. Add the onion and cook, stirring frequently, until onions begin to soften.
2. Add the ginger, curry, and chili (powder), and cook another 30 seconds. Add the sweet potatoes and toss. Add the sugar, salt, pepper, and water.
3. Cover and simmer over medium heat until the potatoes are tender, about 15-20 minutes. Drain and mix in the milk.
