mix ¼ c lime juice with 1 tbsp honey in a large glass bowl. Then mix with that one minced jalepeno pepper, 3 tbsp minced cilantro and salt. Then cut corn off six ears corn and mix that in. Then stir in 1 ½ c fresh baby spinach, 1 large seeded and chopped tomato and ¾ c seeded and chopped cucumber. Chill for up to one hour. We tried this 01/09 and we both loved it. Very fresh and healthy. I used too big of spinach so make sure it is baby spinach. Also I used an whole, peeled cucumber and that was an ok amount. It was a good left over for a couple days but it does get pretty wet. The above amount of dressing is plenty.
