Great alternative to potato salad! It can be served hot or room temperature.
- 2-3 lbs. Yukon Gold or Red Potatoes, sliced
- 1/2 stick Butter
- 4 slices Applewood Smoked Bacon
- 1 medium Sweet Onion, chopped
- 1 cup Cheddar Cheese
- 1 1/2 tsp. Crab Boil
- Salt and Pepper to taste
- 2 Green Onions, chopped
Boil potatoes covered with water and crab boil. While potatoes are boiling, cook bacon slices until crisp and remove to a paper towel to drain. In the fat from the bacon, saute onion until transulent. Drain potatoes well.
In a large bowl, add butter and sour cream, cheddar cheese and saute'd onions. Now pour in drained potatoes and allow to set a few moments to melt butter. Add bacon and green onion. Gently stir potatoes to mix. Add salt and pepper to taste.
