- 3/4 C softened butter
- 8 oz. cream cheese
- 2 C sugar
- 2 beaten eggs
- 1/2 t almond extract
- 1 1/2 C mashed peaches
- 3 C flour
- 1/2 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 1 C chopped blanched almonds
Beat butter, cream cheese and sugar until fluffy. Add eggs and almond extract-mix.
Mash peaches in food processor. Measure out 1 1/2 C mashed peaches and add to mixing bowl.
In another bowl, measure flour, baking powder, baking soda and salt. Mix.
Gradually add flour mixture to peach mixture. Beat at low speed.
Mix in almonds by hand.
Spray Pam in 2 loaf pans or 6 smaller pans. Bake at 350 degrees for one hour.
Cool in pans for 20 minutes, then turn out.
