Lemon Bars

  • 2 C flour
  • 1 C cold better
  • 1/2 C powdered sugar
  • 4 beaten eggs
  • 2 C sugar
  • 8 T lemon juice
  • 1 t lemon zest
  • 1/2 t salt
  • 1 t baking powder
  • 1/4 C flour



Step 1

Cut each stick of butter into 8 pieces. Put in food processor with flour and powdered sugar. Press until it looks like course cornmeal.

Spread in greased 9 x 13 pan. Pat down. Bake at 350 degrees for 15-20 minutes or until golden brown.

Mix eggs with sugar. Add lemon juice and zest. Add salt and baking powder and mix. Then add flour. This will be runny.

Pour on top of crust. Bake at 350 degrees for 30-35 minutes.

Remove from oven and sprinkle additional powdered sugar. Let cool thoroughly.
