Ingredients

  • 4 t sugar, divided
  • 2 t plus 2tsp flour
  • 2 t rolled oats
  • pinch cinnamon
  • pinch salt
  • 2 t cold, unsalted butter cut into small pieces
  • 4 large, ripe peaches

Preparation

Step 1

1) preheat oven to 375

2) in mini processor, pulse 2t sugar, 2t flour, oats, cinnamon and salt for 1 second. add butter and process til crumbly, 2-3 seconds

3) cut peaches into 1/2" thick slices; place in a bowl and gently toss with remaining 2t sugar and 2tsp flour. divide peaches among 4 ramekins; sprinkle with crumb mixture.

4) place ramekins on foil lined baking sheet. bake til tops are gold, about 35-40 minutes
