Italian Zucchini Casserole from Sondra

Ingredients

  • 1/4 pound pork sausage (I use mild italian turkey sausage)
  • 1/4 lean ground beef (I use ground turkey)
  • 1 small onion chopped
  • 2 cloves garlic
  • 1 pound zucchini sliced
  • 2 cups frozen or 15 ounces canned corn drained
  • 1 15ounce tomato sauce or your favorite spaghetti sauce
  • 1 to 2 small cans sliced olives
  • salt and pepper to taste

Preparation

Step 1

Saute sausage and meat onion and garlic together. Add zukes and sauté briefly with meats.
Add remaining ingredients mix and pour in casserole. Top with 1/2 to 1 cup colby or cheddar cheese. Bake 1 hour at 350.
