Ingredients

  • FROSTING:
  • 1 cup butter, softened
  • 2 cups sugar
  • 3 eggs
  • Lemon peel, grated from 1 lemon
  • 1/2 of a lemon juiced
  • 1 teaspoon vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups sour cream
  • 6 tablespoons butter, softened
  • 4 1/2 cups confectioners' sugar
  • 1/2 of a lemon juiced
  • 1 1/2 teaspoon vanilla extract
  • Lemon Peel, grated from 1 lemon
  • 2 tablespoons milk
  • yellow food coloring

Preparation

Step 1

In a mixing bowl, cream butter and sugar. Beat in eggs, one at a time. Add lemon peel, lemon juice and vanilla; mix well. Combine dry ingredients in separate bowl; add to creamed mixture alternately with sour cream (batter will be thick). Fill greased or paper-lined muffin cups with of batter filling it 3/4ths the way. Bake at 350 degrees for 20 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes; remove to wire racks to cool completely.
For frosting, cream butter and sugar in a small mixing bowl. Add lemon juice, vanilla, lemon peel, food coloring to your liking and milk; beat until smooth. Add more milk if you want it thinner, more powdered sugar if you want it thicker. Frost cupcakes.
