Ingredients
- 2 cans black beans rinsed
- 2 large eggs
- 2 tablespoon flour
- 4 scallions minced
- 3 tablespoon cilantro
- 2 garlic cloves minced
- 1 teaspoon ground cumin
- 1 teaspoon hot sauce
- 1/2 teaspoon ground coriander
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup tortilla chips crushed coarse
- 8 teaspoons veg oil

Preparation
Step 1
Whisk eggs and flour to form paste. Stir in scallions, cilantro, garlic, cumin, hot sauce, coriander, salt and pepper.
Process tortilla chips until finely ground. Add black beans rough chop. Add egg mixture until well combined.
Refrigerate for 1 hour or overnight
Cook in a skillet until bottoms browned...about 5 minutes. med heat
