Ingredients
- 1 1/2 cups milk
- 1 cup Pumpkin Puree
- 1 egg
- 2 T. Butter, melted
- 2 T. vinegar
- 1 teaspoon vanilla
- 2 cups Flour
- 5 T. Brown Sugar or Sucanat*
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon ground Allspice
- 1 teaspoon ground Cinnamon
- 1/2 teaspoon ground ginger
- 2 teaspoons Pumpkin Pie Spice
- 1/2 teaspoon salt

Step 1
In one bowl, mix together the 'wet ingredients': the milk, pumpkin, egg, butter, vinegar and vanilla. Combine the 'dry ingredients' in a 2nd separate bowl: the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger, pumpkin pie spice and salt. Stir into the pumpkin mixture just enough to combine: don't over-stir!
Heat a lightly sprayed griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle (350 degrees), using approximately 1/4 cup for each pancake. Use a spoon to widen the 'circle' of the pancake. Flip when side is golden brown. Brown on both sides and serve hot.
