Rhubarb Coffee Cake

This is my second (or tied with first) Rhubarb Recipe! This recipe comes from my Great Aunt Ruth C. We've made this in the family for years- for breakfast, after dinner, before bed, whenever! So flavorful, the rhubarb is sweet, and of course the topping of cinnamon and sugar is theeeeee best- creating just a slight crisp crunch in contrast to to the moist fluffy cake.

Ingredients

  • Topping:
  • 1 1/2 Cups Brown Sugar OR Sucanat
  • 1/2 Butter
  • 1 Egg
  • 1 Cup Buttermilk
  • 1 tsp. Baking Soda
  • 1 tsp. Vanilla
  • 1/4 tsp. Salt
  • 2 Cups Flour
  • 2 Cups Rhubarb, Cut
  • 1/2 Cup Sugar
  • 1 tsp. Cinnamon

Step 1

Cream sugar and butter together. Add Egg and mix. Add rest of ingredients (placing the baking soda into the milk first, stir, then dump in bowl with rest), mix and place in an ungreased 9x13 pan. Top with the cinnamon and sugar. Bake at 350 degrees for 35-40 minutes.


Don't keep buttermilk handy? Me neither! So I make it...

HOMEMADE BUTTERMILK:
Take a 1 Cup Measuring cup- place in 1 Tablespoon of Vinegar OR Lemon Juice then pour in milk to fill to the top. Let it sit 10 minutes, then stir before using.

You can't just have one piece of this coffee cake, it leaves you drooling for more. We made this as a late night snack, for a special treat before bed! I'm a little uptight about the boys having refined sugar that's why I use Sucanat in all my baking and cooking (in case you're wondering why I add that up top in the recipe) But I couldn't resist using normal sugar for the top part! But that's okay because when we do have it- it's special! Too much of anything is bad for kids, they get spoiled too easily, and then it's not cool anymore, haha.

annnnddd then life wouldn't be complete if you didn't get to lick the entire bowl once in a while, lol :O) I love these boys- Emry warms my heart when he randomly says 'Mom, you're the best cooker in the world!' His sincere appreciation makes providing for my family so enjoyable!
