Pineapple Cream Cheese Bars

Ingredients

  • 1 yellow cake mix (could use pineapple cake mix)
  • 2 Large Eggs, used separately
  • 1 stick butter, room temperature
  • 1 8 Oz Cream Cheese, room temperature
  • 1/4 Cup Sugar
  • 1 tsp vanilla
  • 1 small can crushed pineapple (2 TBS Crushed Pineapple drained and 2 with juice)

Preparation

Step 1


Preheat oven to 350 degrees
Mix dry cake mix, 1 egg, two tablespoons of drained crushed pineapple and butter until crumbly; reserve 1-1/4 cup.

Press remaining mixture lightly into an ungreased 9 X 13 inch pan.
Bake for 10 minutes at 350 degrees

Beat cream cheese, 1 egg, sugar, vanilla, 2 tbsp crushed pineapple with juice

Spread over baked layer and then sprinkle reserved crumb mixture over the top.

Bake for an additional 13 minutes.

Cool completely

Refrigerate for 2 hours before cutting into bars.

Serve Chilled
