Vegetarian Tacos with Spinach, Corn and Goat Cheese

Ingredients

  • 1 tbsp olive oil
  • 1 14 oz package extra firm tofu (drained, patted dry and crumbled)
  • 1 1/2 tsp chili powder
  • kosher salt and black pepper
  • 1 10 oz package frozen corn (2 cups), thawed
  • 1 5 oz package baby spinach (about 6 cups)
  • 8 small flour tortillas
  • 3/4 C crumbled goat cheese (3 oz)
  • 3/4 C salsa

Preparation

Step 1

Heat oil in a large non-stick pan over med-high heat. Add tofu, chili powder, 1/2 tsp salt and 1/4 tsp pepper.
Cook, until golden brown, about 4-5 mins.

Add corn, cook, tossing until heated through (about 2 mins).

Add spinach and 1/4 tsp each salt and pepper and toss until wilted.

Fill the tortillas with tofu mixture, goat cheese and salsa.
