Christmas Date Cookies

Ingredients
- 2 C chopped, pitted dates
- 3/4 C boiling water
- 1 C melted butter
- 2 C sugar
- 2 t baking soda
- 1/2 t salt
- 4 beaten eggs
- 12 oz. semi sweet chocolate chips
- 5 1/2 C packed four
- 1/2 C sugar for later

Preparation
Step 1
Pour boiling water over dates. Stir and let sit. Combine sugar, baking soda, salt and eggs. Beat well.
If dates are cool, add to mixture. Then add chocolate chips. Add butter and flour in 1/2 C increments.
Cover bowl with plastic and chill for 2 hours or overnight.
Preheat oven to 325 degrees. Roll doughinto walnut sized balls. Roll in sugar and place on greased cookie sheet.
Bake for 10 minutes. Place dough back in fridge in between batches.
These freeze well.
