Apple Cake

  • Glaze:
  • 4 cups Jonathan apples, peeled and cut into about 1" chunks
  • 1/2 cup oil
  • 2 cups sugar
  • 2 eggs, beaten
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup walnuts, chopped
  • 3 c powdered sugar
  • 1 tsp vanilla
  • 2-3 T milk

Step 1

Mix apples and sugar, then add all the rest of the wet ingredients. Combine all dry ingredients and add to wet. Fold in walnuts and pour into a well greased and floured bundt pan. Bake at 350 for 50-60 minutes. When done baking cool on rack and take a knife and gently loosen the cake from the pan. Wait until it is cooled to invert on a plate.

Make glaze and pour over cooled cake and let set.
