Apricot Bread Pudding

Ingredients

  • 8 slices white bread
  • 1/2 C melted butter
  • 1/3 C sugar
  • 1/2 C chopped dried apricots
  • 3 beaten eggs
  • 2 1/4 C half & half

Step 1

Generously butter a 2 quart casserole. Remove crusts from bread and cut each slice into 4 triangles. Toss bread in melted butter.

Arrange approximately a third of the triangles in the bottom of casserole. Sprinkle 1/3 of the sugar and half of the apricots. Put down half of the remaining bread, sprinkle half of the remaining sugar and all of the remaining apricots.

Cover with the rest of the bread. Scrape bowl to get all butter and put on top. Sprinkle with remaining sugar and set aside.

Whip eggs and light cream. Pour over top of casserole and let stand for 30 minutes.

Preheat oven 350 degrees. Bake 45- 55 minutes. Let cool 5 minutes. Serve with whipped cream or ice cream.
