Pumpkin Tea Bread


Makes 2 loaves, 9x5x3 or 4 mini loaves

  • 3 1/2 cups sifted all purpose flour
  • 2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 can (1lb) pumpkin
  • 2/3 cup water
  • 2/3 cup soft shortening
  • 2 2/3 cups sugar
  • 2 eggs



Step 1

Grease loaf pan, dust with flour. Preheat oven to 350 degrees.
Sift flour, baking soda, baking powder, salt, cinnamon and pumpkin-pie spice; reserve.
Combine shortening sugar and eggs in large mixing bowl; beat at high speed 3 mins.
Stir in flour mixture alternately with pumpkin mixture, beating after each addition until batter is smooth; pour batter into prepared pans.
Bake at 350 for 45 mins or until toothpick comes out clean
Cool for five mins; turn out onto rack; cool the loaves completely.
Freezes well
