CARAMEL BEER POPCORN

  • 2 Tbsp Light Corn Syrup
  • 1/2 cup & 2 Tablespoons Stout, divided
  • 4 Tbsp Butter
  • 1 tsp Sea Salt

Step 1

Preheat your oven to 250 degrees F. Transfer the corn into a brown paper bag and microwave on high for 4 minutes, which is around how long it should take for the popping to slow down to 1 pop per second. Measure out 7 cups of popcorn. Use cooking spray to spray a large baking pan. Add the kernels onto the baking sheet and arrange them into an even layer. Place the popcorn into the oven until the caramel is ready.
Take out a saucepan, place it over high heat and add the brown sugar, light corn syrup, 1/2 cup stout and butter. Regularly stir until the sugar dissolves and then stop stirring. Boil the ingredients for 7 minutes after the sugar dissolves. Remove from heat and stir in the remaining beer.
Use cooking spray to spray a silicon spatula. Carefully pour the caramel sauce over the popcorn and make sure to stir to evenly coat. Bake the popcorn for 20 minutes and then stir. Bake for an additional 20 minutes. When finished, remove the popcorn from the oven and sprinkle with salt. Let the popcorn cool until it has hardened. Store until ready to serve.

Note:
I make popcorn on the stove and it works just a wonderful.
