Ingredients

  • TOMATO PIE

  • Filling

  • 2

    – 14 ounce cans diced tomatoes

  • 1

    small onion chopped

  • 1

    teaspoon dried basil

  • cups cornbread stuffing mix

  • TOPPING

  • cups shredded cheddar cheese

  • 1

    cup mayonnaise

  • ¼

    cup cornbread stuffing mix

  • ¼

    teaspoon dried basil

  • fresh basil (to garnish)

Directions

Preheat oven to 350°F. In a large bowl, mix together the filling ingredients until combined and transfer to a 9×9 casserole dish. In another bowl mix together the topping ingredients and evenly distribute over the casserole dish. Bake for 30-40 minutes or until melty and golden brown on top. Remove from oven and allow to cool slightly before serving.
