This is a 4 ingredient, no-bake dessert. They are vegan, paleo and gluten free.

Ingredients

  • 2 cups creamed coconut (you could possibly substitute coconut butter)
  • 2 cups fresh blueberries
  • 1/4 cup pure maple syrup
  • 2 tsp ground vanilla beans

Preparation

Step 1

1. Combine all of the ingredients in a food processor until the mixture is smooth.
2. Line an 8x8 pan with parchment paper, leaving enough room for the paper to stick out the sides.
3. Dump the mixture in the pan and spread out evenly. The mixture is thick and you may need to wet the spatula to keep from sticking,
4. Once the mixture is in the pan, gently press down with the sides of parchment paper.
5. Stick the pan in the refrigerator for roughly 15-20 minutes, to firm up.
6. Once firm, pull out of pan using parchment paper.
7. Cut into squares. You can use knife, pizza cutter.
8. Store in the refrigerator, in an airtight container, for up to a week, or freeze for longer. Place parchment paper between each bar.
