Ingredients

  • 1/4 cup margarine
  • 3/4 cup sugar
  • 2 eggs
  • 2 teaspoons lemon peel, grated
  • 2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup milk
  • 2 teaspoons lemon juice
  • 2 tablespoons sugar

Preparation

Step 1

Cream margarine with 3/4 cup sugar until fluffy. Add eggs and lemon peel and beat well. Sift together flour, baking powder and salt. Add to cream mixture alternately with milk. Beat until smooth after each addition. Pour into greased loaf pan. Bake at 350 for 50-55 minutes. Let cool in pan for 10 minutes.
Mix lemon juice and 2 tbsp. sugar and pour over top. Poke holes.
