Ingredients

  • 2 lb. vine-ripened tomatoes
  • 1/4 cup extra virgin olive oil
  • 1 Tbsp. balsamic vinegar
  • 1 Tbsp. basil
  • 1 Tbsp. cilantro
  • 1/2 cup chopped red onion
  • Season to taste with garlic powder, black pepper, fennel seeds
  • Garnish with cilantro, chopped almonds, or chopped avocado

Preparation

Step 1

Place tomatoes in boiling water for a few minutes. Remove from heat and dip in cold water immediately. Remove skin from tomatoes. Chop tomatoes and blend with oil, vinegar, herbs, onion, and seasonings. The texture should be chunky. Chill at least 1 hour. Serve with garnish adding more seasoning, as desired.
