Ingredients

    cup yellow corn meal

  • ½

    teaspoon baking soda

  • ½

    teaspoon salt

  • 1

    cup milk

  • 2

    eggs beaten

  • 1

    cream style corn - (17 oz)

  • 2

    cups shredded cheddar cheese

  • 1

    can green chile peppers - (4 oz) chopped

  • ½

    cup chopped onions

  • 1

    pound sausage

  • 1

    can pinto beans - (16 oz)

  • 4

    ounces tomato sauce

  • 2

    teaspoons chili powder

  • ¼

    teaspoon garlic powder

Directions

Stir together corn meal, baking soda, salt, milk, eggs, cream corn, cheese, peppers, and onions; set aside. Brown sausage in large skillet, drain. Stir in beans, tomato sauce, chili powder, and garlic powder. Grease pan and sprinkle corn meal over bottom. Turn half of batter in pan. Cover with meat-bean mixture. Top with remaining batter. Bake in a 350 degree oven for 45 minutes (1 hour at 5,000-foot elevation). Garnish with cilantro when serving. Fried eggs are good with this. This recipe yields ?? servings.
