Bills Potato Pancakes with Chicken

This is a recipe I seen on TV and it sounded very good.

Ingredients

  • Boneless Chicken Breast (1 for each serving)
  • 2 Lemons
  • Extra Virgin Olive Oil
  • Rosemary
  • Salt & Pepper
  • Honey
  • Parsley
  • Potatoe's large enought to have one for each serving
  • 1 Medium Onion
  • Mustard 3 different kinds (Cranberry mustard, Honey mustard, Sweet Mustard or what ever kind of mustard you like) for making the salad vinegarette.
  • Marinade consist of: Lemon juice, EVO, Rosemary, Salt, and Pepper.
  • Glaze consist of: Mustard, honey, olive oil, salt and pepper.

Step 1

Prepare Marinade by using the juice of two lemons mixed with EVO, Rosemary, Salt & Pepper. Make enough to generously coat all the chicken breast pieces with and leave chicken in a glass bowl with the remaining marinade and cover with Saran wrap and refrigerate for 2 hours.
Then remove and place chicken breast in a baking pan coated with olive oil and heat in oven at 375 deg. for 20 to 30 minutes.

Prepare pancakes by using potatoes that have been partially cooked in boiling water. When ready the potatoes should be shredded like hash browns and placed in a skillet coated with EVO. Mash down the shredded potatoes like a pancake and leave in skillet until well browned on one side.
Meanwhild the chcken should be ready to be removed from the oven and then coated with the glaze mixture and placed back in the baking dish. When all the chicken breast are glazed they should be placed in the oven and Broiled until done.

When pancakes are browned on one side, cover the skillet with a plate and turn skillet over while holding the plate so that the pancake will be on the plate with the brownside up. Now place the pancake back in the skillet to brown the opposite side.

Pancake should be done when chicken breast are done in broiler. Place some of the juice from the baking pan on the pancake.

If desired you can make a green salad before hand and have it ready to serve with the chicken and pancakes.
Use a salad dressing with 3 mustard vinegarette, by mixing the three mustards, with honey, olive oil, parsley, and pepper.

Put salad on your dinner plate then add the pancake and chicken breast and enjoy.
