cups white sugar
tblsp. corn starch
Boil beets till soft (not mushy). Remove skins and slice or quarter. Put to side to cool. Mix sugar & corn starch. Add water & vinegar. Boil 5 minutes. Remove from heat and add margarine. Pour mixture over beets in containers. Let stand 1/2 hour. 1 receipe will cover 6 cups diced beets. Harvest Beets are freezable.
