Ingredients

  • 2 tablespoons chopped onion
  • 2 tablespoons diced red, green, and yellow peppers
  • 4 tablespoons margarine
  • 1 cup cooked, diced ham, or sausage
  • 8 each eggs
  • 1 cup milk
  • 1 teaspoon dry mustard
  • 4 each medium potatoes baked or boiled
  • 1 cup grated cheddar cheese

Preparation

Step 1

SAUTE onions and peppers in margarine, and place in lightly greased glass baking dish. Add cooked meat. Beat eggs, milk, and dry mustard. Pour egg mixture over meat. Slice cooked potatoes and layer on top of egg mixture. Bake at 375 for 25-30 minutes or until egg mixture is set. Turn off oven. Sprinkle with grated cheese. Leave in oven until cheese is melted. Remove from oven and cut.
