Ingredients

  • Cake:
  • 3 Cups Sugar
  • 3 Cups Flour
  • 3 tsp cinnamon
  • 3 tsp baking soda
  • 1 1/2 tsp salt
  • 1 1/2 cups oil
  • 4 1/2 cups grated carrots
  • 6 eggs
  • Frosting:
  • 8 oz. cream cheese
  • 2 cups powdered sugar
  • 4 tblsp. butter
  • 1 cup toasted pecans
  • 1 tsp. vanilla

Preparation

Step 1

Sift together sugar, flour, cinnamon, soda, and salt.

Add:
oil, grated carrots and eggs.

Mix well and pour into a greased 13x9 pan and bak @ 350 for 45-50 minutes.

When cake is cool, mix together frosting ingredients and frost cake.
