Spinach and Cheese Pizza Muffins

Serve the hot muffins with pizza sauce or marinara for dipping.
Ingredients
- Cooking spray
- One 10-ounce package frozen spinach
- 1 tablespoon olive oil
- 3 cloves garlic, chopped
- 1/2 cup crumbled feta cheese
- Salt and pepper
- One 14-ounce tube refrigerated pizza crust
- 1/2 cup shredded mozzarella cheese

Step 1
Preheat the oven to 350 degrees F. In a standard 12-cup muffin pan, grease the inside of 8 muffin cups with cooking spray.
Thaw the spinach according to package directions. Squeeze as much liquid as you can from the spinach.
Heat the oil in a nonstick sauté pan over medium heat. When hot, add the garlic and cook for 1 minute. Add the spinach and cook until the spinach is heated through, about 3-4 minutes. Transfer the spinach to a mixing bowl and cool. Toss in the feta cheese and season with salt and pepper to taste.
Roll out the pizza crust and spread the spinach mixture in an even layer over the dough. Starting from a long end, roll the dough into a long cylinder. (Spinach may spill out from the side.) Cut the roll crosswise into 1-inch wide pieces and place in the prepared muffin cups. Sprinkle mozzarella over the tops of the muffins
Bake in the oven until golden on top, about 20 minutes. Serve warm with pizza sauce or marinara.
