White Chocolate Apricot Parfaits

Ingredients

• 1 pkg. instant white chocolate pudding mix
• 1 c whipped topping
• 3 cups fresh apricots (sliced)
• 2 T apricot preserves
• 1/4 tsp. cinnamon
• 1/4 c toasted sliced almonds

Preparation

Step 1

Prepare pudding per directions on box using 1 c milk. Fold inn whipped topping.

In bowl toss apricots with preserves and cinnamon.

Layer apricots and pudding in small serving glasses. Sprinkle with almonds and garnish with apricots

VARIATIONS:
Peaches 'n' cream: Use a cheesecake pudding mix and fresh peaches and peach preserves.

Cocoa-Berry: Swap in chocolate pudding mix and layer with berry preserves and sliced strawberries
