Shredded Swiss Potato Bake

Ingredients
- 2 tablespoons butter or margarine
- 1 cup finely chopped onion
- 4 cups shredded or diced cooked and peeled
- potatoes (about 4 medium)
- 2 cups shredded swiss cheese
- 1/4 cup flour
- 1 teaspoon salt
- 1/2 teaspoon lemon pepper
- 3 each eggs
- 3/4 cup half and half

Preparation
Step 1
PREHEAT oven to 350.
IN a large skillet, add butter or margarine and melt. Add onion and saute until tender. Remove from heat and add potatoes.
TOSS cheese with flour, salt, and pepper and add to skillet and blend thoroughly.
IN a small size mixing bowl combine eggs andhalf and half. Stir into potato mixture. Spoon into a greased 9 inch square baking dish.
BAKE uncovered for 30 minutes. Cool for 5 minutes and cut into squares.
